Baked Potato
Recipe

Generally you
would use medium sized potatoes but baked baby
potatoes make a fantastic finger food or side
dish. Cooking time varies depending on
the size of the potato. Generally I find medium
sized potatoes take around 60 minutes to bake.
Floury varieties
are the best for baked potatoes. These include;
King Edward, Russet, Maris Piper, Golden Wonder.
Ingredients:

4 medium sized
potatoes.

Olive oil.

Sea salt.
Method:
-
Preheat oven to
220C.
-
Gently scrub
potatoes to remove the dirt.

Prick several
times with a fork to allow steam to escape
during cooking.

Lightly coat
potato with olive oil.

Sprinkle with sea
salt.

Bake for
approximately 1 hour, until skin is crispy &
potato is soft & fluffy on the inside.

Using a fork, cut
a dotted line across the top of the cooked
potato & then squeezing both ends towards each
other to open it up.

Another method is
to cut a cross on the top of the cooked potato &
then squeezing the sides to open it up.

Be careful not to
burn yourself when opening up the cooked potato.
Potato toppings:
Some popular baked
potato toppings include;

Butter.
-
Sour cream &
chives.
-
Grated Cheddar
or Red Leicester Cheese.

Cottage
cheese.
-
Plain yoghurt.
-
Tomato salsa.
-
Chili con
carne.
-
Coleslaw.
-
Baked beans
(with or without cheese on top).

Creamed corn.
-
Fried onions.
-
Smoked salmon
& dill.
-
Tuna & melted
cheese.

Egg cracked
over the top & then baked in the oven for 5
minutes.

Egg salad.
